The first thing that we did was insert the footage into the sequence, this was without creating a new composition so that the video's settings are applied.
Once the video was in the sequence we selected it and the rotoscoping tool, we simply traced the thing (in this case person) we wanted to mask:
We use the roto-pen tool to trace out the person. We did this for the entire clip, the mask sometimes changes in unpredictable ways so we have to fix that, the mask has a 'minus' feature as well when you hold in control.
We insterted a PNG that we madd in Photoshop and inserted it on the first video layer, then used the toggle switches / modes button to make the text an overlay. This is what we ended up with:
